What Rum is Made From

Rum is a distilled spirit made from sugarcane or its byproducts. There are two main raw materials used in rum production. The first is molasses, which is the thick dark syrup that remains after sugar has been extracted from sugarcane juice during the sugar refining process. Molasses is the most commonly used raw material globally and forms the base of most Caribbean and Indian rums. The most commonly used barrels are former American bourbon barrels made from white American oak, which impart vanilla, caramel, and coconut notes. Some producers also use former sherry, port, cognac, or wine barrels to add different flavour dimensions. One important difference between rum maturation and whisky maturation is the climate. Rum is typically matured in tropical climates where temperatures are consistently high, accelerating the interaction between the spirit and the wood.
